Protein Pancakes

 

Thought pancakes for breakfasts was a dream of the past? Think again! Ok, maybe you can’t have them laden with bacon and syrup or nutella, but for a healthy breakfast these are a pretty good substitute!

INGREDIENTS (serves 1):
40g x rolled oats
2 x eggs
1 x tbsp. unflavoured protein powder
pinch of salt
3 x brazil nuts, finely chopped

METHOD:
Mix the dry ingredients in a bowl and make a well in the centre

Add the eggs and beat well. If the mixture is too thick to pour add a dash of milk at a time until the right consistency is achieved

Heat a tsp of coconut oil in a frying pan and pour the batter in, either as one large or several small pancakes

Cook for a minute, or until you see the pancake starting to rise a little.

Flip and cook just for a minute on the other side. Be warned the protein powder cooks very quickly so don’t leave them on heat for too long as they will turn rubbery.

Serve topped with any of the following savoury or sweet toppings:

avocado, cherry tomato, salmon, mackerel, mushrooms, ricotta, spinach
blueberries, banana, honey, strawberries, greek yoghurt, cacao nibs
