Homemade Healthy Egg ‘Mayo’ and Tomato on Oatcakes

 

A healthy homemade twist on the classic egg mayo sarnie!

INGREDIENTS:
2 x soft boiled eggs, cooled
100g cottage cheese
1 tsp wholegrain mustard
black pepper
oatcakes
cherry tomatoes to serve

METHOD:
Peel the eggs and mash together with the cottage cheese and mustard

Add black pepper to taste, and spread the mix onto a couple of oatcakes

Top with a sliced cherry tomato, and enjoy a high protein snack that will keep you feeling full for longer
